Huevos Rancheros

Ingredients

  • 4 large eggs
  • 4 corn tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup salsa (fresh or jarred)
  • 1 ripe avocado, sliced
  • 1/2 cup shredded cheddar or Mexican cheese blend
  • Fresh cilantro, chopped
  • Salt and pepper, to taste
  • Oil for frying (olive or vegetable oil)

Spice Blend

  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano (Mexican oregano if available)
  • Pinch of cayenne pepper (optional, for heat)

Optional toppings

  • Sour cream or Mexican crema
  • Lime wedges
  • Jalapeño slices
  • Hot sauce

Instructions

1. Warm Tortillas

Heat a skillet over medium-high heat. Lightly fry corn tortillas in a little oil for about 30 seconds per side until crispy around the edges but still flexible. Set aside on paper towels.

2. Prepare Spiced Beans

Heat black beans gently in a small pan with 1/2 teaspoon of the spice blend. Season with salt and pepper. Let simmer for 2-3 minutes until warmed through and fragrant.

3. Enhance the Salsa

In a small saucepan, heat the salsa with the remaining spice blend over medium heat for 2-3 minutes, stirring occasionally. This blooms the spices and creates a more cohesive flavor. Keep warm.

4. Cook Seasoned Eggs

In the same skillet used for tortillas, reduce heat to medium and add a little oil. Crack eggs and fry sunny-side up or over-easy. Season with salt, pepper, and a light sprinkle of the spice blend while cooking.

5. Assemble

  • Place two tortillas per plate
  • Spoon warmed spiced black beans onto each tortilla
  • Top each tortilla with a seasoned fried egg
  • Generously spoon the warmed, spiced salsa over the eggs

6. Garnish

Add avocado slices, sprinkle shredded cheese, and garnish generously with chopped cilantro. Serve immediately with lime wedges, jalapeño slices, and sour cream or Mexican crema.

Tips

  • Toast whole cumin seeds and grind them fresh for even better flavor
  • Add a minced garlic clove to the beans while heating for extra depth
  • Try finishing with a squeeze of fresh lime juice over everything
  • For extra richness, drizzle with a little Mexican crema before serving
